Recipe for the Fruit slices as promised
For the homemade mincemeat
1 large orange (grated and juice )
1 lemon grated
glass of red wine or port
500g Raisins
500g Mixed bag of sultanas
200g Cranberries
2 large cooking apples peeled and chopped
2 large cooking apples peeled and chopped
large tub Cherries
large tub mixed peel
nutmeg
cinnamon
1/4 cup of brown sugar
2 Lg tablespoons of honey (optional)
mixed nuts (optional)
put wine, honey, sugar and juice in a pan, simmer until sugar dissolves
add the chopped cooking apple, and simmer till it start to soften, add all the fruit and nuts and spices. simmer for about 15 minutes stirring to coat the fruit, allow to cool,
this keep in an air tight container for about a month in the fridge.
(this amount should make 2/3 flans and is beautiful for christmas mince pies)
For the tart
line a flan dish with short crust pastry, (lidl is the best value)
cover base with fruit mixture, (don't over fill) leave room for sponge to rise

125g butter, softened
125g caster sugar
1 tsp almond extract
50g ground almonds
3 eggs
150g plain flour
1/2 tsp baking powder
I put everything into food prosessor for 2 mins,
Put small spoonfulls dotted over the fruit, don't spread the sponge mixture over the fruit as it will take to long for sponge to cook through.
the sponge mixture will find its own level in the oven.
bake for about 30 mins in the oven 180ºC
